Gluten Free Blueberry Lemon Bread with Lemon Glaze

When Pamela posted this recipe a couple of weeks ago, I was literally drooling on my computer.  I knew it had to be mine (or my belly’s) and I got to baking right away with my trusty Cup4Cup.  I love bread, way too much for someone who is gluten free so I end up making a lot of my own to satisfy that craving.  I love lemon and I love blueberry, and both flavors are not overpowering in this recipe, while the glaze gives the tiniest hint of sweetness, without making you feel like you binged.

Ingredients – Bread
1/3 cup melted butter
1 cup white sugar (I used Turbinado)
2 eggs, room temperature
1/2 teaspoon vanilla extract
1.5 cups + 2 tablespoons flour (I used Cup4Cup)
1 teaspoon baking powder
1 teaspoon salt
1/2 cup milk
2 tablespoons lemon zest
1 cup fresh or frozen blueberries (I used a mix)

Lemon Glaze
Half or whole freshly squeezed lemon juice, depending on how strong you want it
1/2 cup powdered sugar (may need more depending on amount of lemon juice)

Directions – Bread
1.  Preheat oven to 350
2.  Grease an 8 x 4 loaf pan
3.  Beat together butter, one cup sugar, eggs and vanilla extract.
4.  In a separate bowl, mix 1.5 cups flour, baking powder, and salt.  Stir into egg mixture followed by milk and mix.
5.  In the same bowl the dry ingredients were in, add the blueberries and toss with remaining 2 tablespoons of flour
6. Fold blueberries and lemon zest into batter and gently stir.  Pour into prepared pan.
7.  Bake 50-60 minutes, until toothpick in center comes out clean. Cool in pan for at least thirty minutes.  (I did a couple of hours.) Remove from pan and glaze.

Glaze
– Combine lemon juice and powdered sugar and beat with electric mixer until a smooth glaze forms.  Drizzle over top of bread.
