Super Easy Egg Muffins

When I found this recipe on Facebook, I had to give them a try.  I am always looking for more protein-filled snacks (to keep me full!) and these are low calorie, low fat, low sugar, high protein.  Bonus:  they are ridiculously easy to make!


Ingredients
1 whole egg
2 egg whites
1/2 banana, mashed
A couple dashes of cinnamon
Two packets of Stevia

Directions
-Heat oven to 350 and spray a mini muffin pan with coconut oil spray
-Mash banana well
-Mix banana with remaining ingredients well
-Pour 1 to 2 tablespoons of mixture into each tin.  
*you could use a full size muffin tin and put 3-4 tablespoons in
-Bake for 20 minutes


These are only 15 calories a serving!!  Enjoy!
