Ingredients
One package boneless, skinless chicken breasts
1/2 white onion, diced
1/2 cup creamy, natural peanut butter
3/4 cup organic chicken broth
1 lime, juiced
1/2 cup soy sauce (we used gluten free)
1 tsp cumin
Chopped scallions
Crushed peanuts
Directions
– Place chicken breasts in crockpot (mine were frozen) and onion
– In a bowl combine, peanut butter, chicken broth, lime juice, soy sauce, and cumin. Pour over chicken.
– Cover and cook on low 7-8 hours.
– Top with crushed peanuts and diced scallions.
I served ours on brown rice. My kids actually ate a tiny bit which I will take as a win!
