I was desperately hungry for a creamy, but not heavy or super fattening soup the other night and all of the recipes I found were ones that I only had part of the ingredients for. So after lots of cookbook and Pinterest research and several looks into my fridge I came up with something sort of original. It is the combination of a few recipes and what I had on hand. I thought it came out delicious and I can’t wait to make it again! It would be so tasty with some toasty bread or a salad.
Ingredients
– 4 all natural chicken sausage links
– 3 stems of kale, stems removed, diced small
– 6 small potatoes, peeled and cubed
– 3 tablespoons olive oil
– 4 cloves of garlic minced
– 1 box chicken stock
– 1/4 cup half and half
– Pinch of crushed red pepper
Directions
– Heat olive oil in a soup pan. Add sausage and brown.
– Add garlic and cook for three more minutes until fragrant
– Add potatoes and chicken stock
– Bring to a boil then reduce heat to a simmer and simmer for about 20 minutes until potatoes are tender.
– Add in kale, half and half, and red pepper and cook for five more minutes, stirring occasionally.
– Serve and enjoy!
