Gluten Free Black Bean Brownies



So the name of these is pretty odd right?  Black bean brownies?  Are they savory or sweet? Well, my friends, these babies are SWEET!  They are gfree and full of protein and healthy complex carbs.  My kids (and Josh) have been gobbling them up so I will take that as a win!  The texture is similar to soft fudge and they are surprisingly delicious.  I highly recommend as both a gluten-free and healthier alternative to one of my favorite sweet treats!

Makes 9 servings

Ingredients
15 ounce can of black beans, drained and rinsed
3 eggs
1/2 cup sugar
1/3 cup cocoa powder
1/2 tablespoon vanilla
2 tablespoons vanilla yogurt (I used Greek)

Directions
– Preheat oven to 350
– Blend beans and eggs (I used the Vitamix) until smooth and pastelike
– Add cocoa powder and vanilla and continue to mix
– Add sugar and yogurt
– Blend until entire mix is smooth
– Bake for 25 minutes
– Cool for 20 minutes before serving

Nutritional information: 130 cal, 4 g fat, 21 g carbs, 4 g fiber, 6 g protein

  3. I have to say the name sort of turns me off haha but the picture looks delicious! I prefer gooey fudgey brownies over cake-like ones any day! I just won't tell my husband what they are 🙂
