Recipe: Clean Eating Banana Bread


I stumbled upon this clean banana bread recipe a few weeks ago on Pinterest and finally made it last week.  Then again yesterday.  It is clean and it is tasty.  If you slice it into about ten pieces each serving is about 190 calories.  It is easy to make and even easier to eat.  Adding chocolate chips (I use the Enjoy Life dairy-free, nut-free, gluten-free ones) is key! The recipe below includes some of my tweaks (switching coconut nectar for agave nectar, etc.)

Ingredients

4 mushy bananas

4 tablespoons coconut oil, softened

2 eggs

1/3 cup agave nectar

1 cup buckwheat flour

1 cup almond meal

1 teaspoon sea salt

1/2 teaspoon baking soda

1/4 teaspoon baking powder

1 teaspoon cinnamon

1/2 cup chocolate chips

Directions
–  Preheat oven to 350
–  Mix wet ingredients (bananas, coconut oil, eggs, agave) together in a bowl, use a whisk     and/or a potato masher
–  Mix dry ingredients together in a separate bowl (flour, etc.)
–  Pour dry ingredients and chocolate chips into wet ingredients and mix thoroughly.
–  Pour mixture into greased (with coconut oil or cooking spray) small loaf pan
–  Bake for 40-45 minutes 
–  Let cool before removing from pan
–  Eat and enjoy!
