I think it has been a full year or more since I have posted a recipe. Pregnancy and a baby really took away my love and time for cooking. I’m starting to ease back in, but with quick and simple recipes only. Riley gets super fussy from four o’clock on, since that window of time to make dinner is small and stressful.
I’m the first to admit I am awful at cooking ahead. I cannot meal plan or pre-make anything to save my life. However, there are a few snacks that I manage to squeeze in during nap times that everyone in our house will eat. And it is very rare that we will all eat something. 😂
Enter the energy ball. I’m sure you have seen those all over Pinterest in the last few years, and for good reason. They’re easy to make, pretty damn tasty and fairly healthy. They are packed with fiber and healthy fats to help fill you up and keep you full. My kids love granola bars, so these make for an easy swap out for them. I will eat a few of these as breakfast or one here and there as a snack. We rarely can keep a batch of these around for more than two days at a time.
A couple of notes: you can use honey, agave or maple syrup in this. I have used them all but the agave holds them together the least well. You can also use any type of nut butter or add in chia seeds or coconut flakes. These are really fun to make and tweak to your own taste. That is how this recipe came about, through trial and error with other ones and finding what we all prefer to eat.
Easy Energy Balls
Quick and simple to make energy balls, filled with fiber to help keep you full!
- 1 cup oatmeal
- 1 cup ground flax seed
- 1/2 cup agave, maple syrup or honey
- 1/2 cup dark chocolate chips
- 1 cup almond butter
Mix all ingredients together in a bowl using hands
Use hands to form into small balls
Place on plate or pan covered in wax paper and refrigerate for 30 minutes
